Chewy Oatmeal Applesauce Cookies
Applesauce is super simple to make! Since I love using up apples & not having to throw any in the compost pile, applesauce is a really easy way to turn those aging apples into something wonderful. Sometimes, like after Thanksgiving, I have way too much applesauce. In those moments, this recipe for Chewy Oatmeal Applesauce Cookies comes in handy. I can bake up a batch, let my family enjoy them for a day or so, & freeze the rest of the cookies for a later time.
Ingredients
1 3/4 Quick Oats
1 1/2 Cups Regular Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
3/4 Teaspoon Salt
1 Teaspoon Cinnamon (Madagascar if you have it)
1/2 Teaspoon Fresh Ground Nutmeg
1/2 Butter, room temperature
1 Cup Dark Brown Sugar
1/2 Cup White Sugar
1 Egg
3/4 Generous Cup Applesauce
1 Cup Dark Chocolate Chunks
1 Cups Raisins
1 Cup Pecan Pieces

Preheat oven to 375.

Grease 2 Cookie Sheets.

Whisk together Oatmeal, Flour, Baking Powder, Baking Soda, Salt, Cinnamon & Nutmeg in a medium bowl.

Add Butter & both Sugars to a large bowl. Cream with electric mixer. Add Egg & Applesauce & beat again 3-4 minutes.

Add flour mixture to wet mixture in 2-3 batches, beating with electric mixer & scraping down sides of bowl with a spatula between each batch.

Using a wooden spoon, stir in Chocolate Chunks, Pecans & Raisins until mixed well.

Drop by rounded teaspoons unto greased cookie sheets. Leave room as they do spread some. Bake for 10 minutes – 1 minute more for the cookie tray on the bottom shelf if it isn’t fully cooked in the centers of the cookies.

Let cook cool on cookie trays for 5 minutes before transferring to a wire rack.
