Za’atar Labneh Roasted Garlic Dip
Ooooh! This recipe is a perfect choice to take to a holiday party – you wanna know why? Because you really want to eat it all yourself, & taking it means you get to eat it slathered all over a few slices of pita & walk away. I don’t think I would be walking away from the bowl if it was sitting out in my kitchen; I’d be stuffing my face with it!
By the way, I make homemade Ricotta & Labneh in my Instant Pot. You can use either for this recipe. They are both super easy & come out very thick & rich. I highly recommend (not an Ad).
Ingredients
4oz Feta Cheese, room temp
6oz Homemade Ricotta or Labneh, room temp (of course you can use store bought).
8oz Cream Cheese, room temp
12 cloves of garlic
6 Tablespoons Olive Oil
2-3 Tablespoons of Lemon Zest
Sea Salt
Black Pepper
1 Tablespoon + 1/2 Teaspoon Za’atar
a few shakes Sumac
Instructions

Make sure all the cheeses are room temperature.

Heat Olive Oil & Cloves of Garlic in a cast iron pan until garlic is soft and golden brown (about 10 min).

Add Feta, Ricotta or Labneh & Cream Cheese to Food Processor & blend.
You can also modify this recipe to use only cream cheese & feta if you prefer.
NOTE ABOUT STORE BOUGHT RICOTTA: If you use store bought Ricotta, squeeze excess liquid out of cheese by placing it in a tea towel or cheese cloth and squeezing.
NOTE ABOUT STORE BOUGHT LABNEH: Get the thick Labneh, not the yogurty looking labneh.

Add 10 cloves of browned garlic & about 4 Tablespoons of the heated Olive Oil to Food Processor & blend for 1-2 minutes or until garlic is pureed into cheeses.

Add a good pinch of Sea Salt, a few grinds of Fresh Black Pepper, the Lemon Zest & a Tablespoon of Za’atar. Pulse.

Let sit for a few hours in fridge for flavors to develop.

Place Dip in a serving bowl, decorate with remaining garlic-infused Olive Oil (with the last 2 browned Garlic Cloves, a shake of Sea Salt, a shake of Sumac & remaining 1/2 Teaspoon of Za’atar. Serve at room temperature for best flavor.
